Basic Mayonnaise

For Biggie's birthday I made yellow cake cupcakes, three egg yolks, with chocolate frosting, four egg whites and also a pound of butter. When I make frosting I do not fuck around. And mayonnaise, one egg yolk, WIN!

Probably should have warned the sweetie man when I offered him the beater that it was mayonnaise not frosting though.

one egg yolk
1/2 teaspoon mustard
1/2 teaspoon salt
pinch cayenne pepper
1 tablespoon vinegar
3/4 cup olive oil

Whisk together egg yolk, mustard, salt, cayenne, and vinegar in a small mixing bowl. Whisk in the olive oil a drop at a time, you are looking for it to emulsify like vinaigrette, only this will be thicker.
