Cannellini Bean and Avocado Wrap with Baby Spinach

Baby spinach is also good. And if you don't happen to have tomatoes on hand, a couple tablespoons of chopped sundried tomatoes also works!

a can of cannellini beans
two green onions
a chipotle pepper
an avocado
2 heaping Tbsp chopped sundried tomatoes
1 Tbsp lime juice
fajita-size whole wheat tortillas
baby spinach

Rinse and drain the beans. Mince the green onions and chipotle. Mash the beans in a flat bowl (I use my skillet) with a potato masher. Peel and pit the avocado and mash it right into the beans. Stir in the tomato, onion, chipotle, and lime juice.

To make a wrap, I toast a tortilla right on an open burner with tongs. Spread a stripe of bean mash across the middle of the tortilla, top that with baby spinach, then roll it up.
