Rice Bowl with Marinated Vegetables (beet) roots, greens, stems

Ha well, the problem with photographing my rice bowls is going to be that it's getting dark around dinner time. By the time I put the bowl together, I had lost my natural light. So it goes.

I had a different bowl planned, actually. But pit crew brought home bunch beets from the grocery, so I decided to make it an all-beet production. The actual beets were to be peeled and cubed, and roasted with a tiny bit of olive oil and salt. Then there's usually a leafy thing dressed with rice wine vinegar, that could be the beet greens. Then I had these stems, and what, they're edible, if nothing they could stand to be a vehicle for garlic, and they did pretty nicely for that.
